Hopefully I'm not hallucinating this, but there was an episode of odd lots where the guest gushes about the impressive supply chain of cheesecake factory given how much of their menu is from scratch, which kind of felt like the people who say they are impressed with Taylor Swift as a businesswoman

Cooking from scratch across hundreds of sites makes ingredient forecasting the hard part. I'd expect spoilage control, not purchasing power, to decide who wins there.
