If you like cheese/jalapeño sourdough, try adding some chopped tart apple (I use fuji). I got the recipe from a small book: Vegetarian Southwest -- Lon Walters) : Atalya's Green Chile - Apple - Cheddar sourdough. It's so good I had to guard the cooling loaves from both my wife and our foster dogs!

Huh, never thought about adding apples to my bread. Do you try and dry the pieces? I have a hard time with inclusions. They don't want to stay inside the dough, haha. It also makes it hard to score them. I'll have to pick up some tart apples next time. :)

BTW, as a place to start, I used the same bakers % of apple pieces and cheese. Often I used Anaheim chillies -- roasted and skinned --instead of jalapeño. Plenty of room for variation.
