I'm potentially interested in mu, but I simply don't understand its relationship to bsky, and whether moving to it would mean starting from zero?

You can use Outlook, Apple Mail, Thunderbird, etc to check your mail. They each have their own features, but they all send and receive mail. The person sending you mail doesn't care what you use, because it's all compatible. They just need your address. This is mu and bsky.
