Okay, so I’m baking a cake for a friend’s engagement party. I’m bringing it over in disposable aluminum pans to make the dish/cleanup situation easier. Unfortunately, the recipe calls for a 9"x9" pan, and these aluminum pans are ~7"x7". That means the bottom area is ~60% of what it should be.

Okay, that’s not going to bake up properly, but no problem. I can double the recipe and use 3 pans, and that’s closer to right! So what do I actually do? Well, I *triple* the recipe and grab 2 pans! I only realize my mistake as I’m filling pan #2 and thinking “this is more batter than I expected!”

New plan: frantically grab pan #3 and use all 3, even though I’m probably still overfilling them. Start the oven at 350°F, lower it to 325°F halfway through in the hope that I can get the interiors cooked before the outsides burn. Also it’s a chocolate cake, so I can’t use the color as an indicator.
