Roast carrots, onions and garlic. Place roughly chopped roasted vegetables in a pot with an equal volume of stock. Bring to a simmer and add your choice of seasonings - I like curry powder, some people like cinnamon, cloves and nutmeg with chili powder. Use an immersion blender, real blender or a

chili with slow cooked meat rather than ground meat. use a few kinds of spicy peppers, some chili powder, cumin, garlic, onions, tomato paste, honey to tame spiciness, maybe beans, s/p and whatever else you want to throw in there. taste and adjust. simmer in crock pot 6-8h.

precook the cubed meat in the crock pot first, but don't finish it. drain juice then add other soup ingredients and let it finish in the soup. after ~6h try to mash the meat against the sides of the crock pot with a wood spoon so it breaks up into strands.

Easy fall soup: one med butternut squash (peeled chopped), one onion (chopped), 1/2 apple (peeled). Simmer 30min in 1 tetrapak chicken broth, then puree. Add a bit of curry paste, fresh lime juice, salt, and a dollop of coconut milk, stir till smooth.

Don’t throw out rinds of parmiggiano regiano - add them whole to minestrone-type soups that have long simmering. Remove before serving. This adds umami.
