Every would-be restaurateur should be forced to run a food truck for a year. If you hate that, imagine if it cost you 10x as much to do the same job, and you can't drive to a new spot if your clientele doesn't materialize!

I always think of this when I see a rotating door of restaurants trying to exist in the same spot. Only to be gone months later it seems like a reasonably good idea to test it with a truck

In a neighbourhood where I used to live, there was a pizza & burger place in a not-great location. They survived about 18 months before going under. A new person decided to lease the same spot and run ... a pizza & burger spot. They lasted a year. The next pizza & burger place lasted 18 months.
