120 lbs of apples. 48 pints of apple sauce, 12 pints apple butter. 30 lbs of freeze dried apple slices, 4 gallons apple scrap vinegar and 3 gallons of fermented apples. My house smells like Christmas. Tomorrow I pick up 120 lbs of tomatoes and 50 lbs of onions. Salsa. freeze dry tomatoes as well.

I am not looking forward to this weekend. 3 hogs ready for butcher and 67 chickens. Yes I am thankful and when it's done it will be great. It is so much work. Yikes. At least I know where it comes from.

Processed 20lbs potatoes for freeze dryer, 15 lbs of zucchini. Jarred up freeze dried oregano, thyme, chives, sage, majoram and celery hearts for powder. 6 pints of raspberry jam and 1 loaf sourdough bread with a good amount of starter in freezer for freeze drying. Busy productive day.
