Large red onion, carrots, celery, garlic, ginger, thyme, salt, pepper, bay leaf, soy sauce, apple cider vinegar. 1 lb mushrooms, 8 cups broth. Sautée the mirepoix, add mushrooms, spices etc. then add the broth, let it rock out for a minute and then simmer aaaalmost covered for 45-60 min
