I would recommend the Sussex Charmer as the kind of strong, crunchy cheddar that makes your eyes water just a little, in the best possible way. I’m not allowed to buy it often.

if you are in canada and see it, I highly recommend the cows 2 year white cheddar. the crystal-iest cheddar i’ve come across

I can't pick just one cheese, different occasions and environments call for different cheeses. On a sandwich? Provolone or pepper jack. As a stick? Mozzarella. On pasta? Pecorino. On a burger or in a grilled cheese? American. If I want to feel fancy? Brie.
