Man oh man, I wish y'all would stop with meat worship and "you might be surprised" click bait trash. It's not sustainable, and the pandering is embarrassing.

I have solar so keeping the oven on for hours is no problem. I season my baby back ribs with dry rub, put them on a cooling rack suspended over a cookie sheet. Place it in the oven at 300 degrees with water in the tray for 3-4 hours. The bones easily pulled away from the meat.

Low and slow is absolutely the best - especially if you sous vide it.
