Couple more weeks left on the remaining herb ferments, they’ll go in the fridge and I’ll focus on some of my other projects that don’t take six plus months, because if I mess up one more thing I’m gonna cry

So I had to mess with the plain mint honey a bit and had to add extra Honey, I did originally add sugar but the sugar wasn’t going into the syrup, it did dilute the flavor a tiny bit but it is quite good. Also, I had to dump a little bit of the top of the mint honey because the jar was way too fill

The plain mint honey I put a little bit of plain white sugar into it, which will add some sweetness while it ages in the cabinet for the next month and in the fridge for the next six month

Next season

I increased the size of the basil honey and now I’m just playing the waiting game with a lot of my projects, the two mint honeys are mostly just for my own enjoyment but I will be taking half of each batch to put into a new huge batch

I’m tired of this grandpa

I don’t feel good so I don’t wanna mess with anything I’ve been making until I feel better so that I don’t contaminate anything worse

I strained the two mint honeys, the plain one and the fruited one and they’re gonna start the aging process, the next two ferments that will be ready soon is the Rosemary honey and the apple mint vinegar

The apple cider is still bubbling away in the crockpot, I just checked it this morning and it smells and tasty quite yummy
