Tried a new to me technique for flank steak-marinating it in Shio Koji, a rice paste inoculated with Koji, the ancient Japanese mold used to produce soy sauce and miso. This mimics the enzymatic action of dry-aging. Cooked using reverse-sear then finished with lemon juice and Maldon flake sea salt.

This very good boi had dental surgery yesterday and they had to extract 6 teeth. His life on the streets / woods before we rescued him 4 years ago took its toll on his teeth. He’s feeling better this morning.
