Forgot to post this last night. The meal prep continued: Thai curry is so immensely simple, anyone can do it. I did it in a hurry and even with a simmer, it took me 30 minutes to make, not accounting for the 40 minutes of the rice. I had had 10 minutes to clean up after myself, felt pretty great!

Okay okay full post, once I got my head on straight. Enchilades Molé Pollo. Inside is spaghetti squash, black beans, and the chicken. Outside is Hernandez (can't be beat sorry) roasted Verde and a cremé and roasted sweet potato puree. Low carb even!

Two whole trays of molé left over afterwards, going in the freezer.

Its my birthday on Saturday so I meal prepped this weekend something special. I picked up a 7lb chuck and turned 5lbs into this red wine based beef stew and 2lbs into Chipotle pulled beef for sandwiches.

Sweet potato and chickpea curry. Roasted the garlic, onions, and sweet potatoes in the oven, and after 45 minutes, peeled the potatoes, and threw it all in a pan with roasted cumin, fennel, and fenugreek seeds and added a little ginger, chinese 5 spice, chicken broth, and green onions.!

God I suck at this thing.
