塩〆鰤のジンジャーカルダモンソース。 刺身用の柵の鰤に1%塩を振り、ペーパー→ラップの順に巻いて冷蔵庫10分。 ソースは、レモン汁小さじ1、ナンプラー・はちみつ各小さじ1/2、カルダモンパウダー3振り、オリーブオイル大さじ1を、とろみ出るまで混ぜ、生姜薄切り8枚をせん切りして、少し残して混ぜる。 厚めに切った鰤にソースをかける。 厚めの鰤をとろりとしたソースで食べたいなぁ…から考えたこれ、カルダモンの香りがさわやかで満足！
