This is a great recipe as it is BUT 1. Cut the roast into two inch cubes before salting, then cure in the fridge on a baking rack set in a half sheet pan for 4-12 hours. 2. While the oil is heating, toss the cubes in 1 tsp baking soda per lb of meat 3. Brown in small batches, don't crowd the pot

So @merrillbarr.com made a formal recipe of tonight’s cook.

Alternatively you could roast a head of garlic and squeeze the paste into the mashed potatoes but I'd be using the leftover stew to make a beef pot pie the next day so I need the garlic flavor in the broth

Finally, before it goes in the oven I'm trying together some sprigs of rosemary and thyme to throw in there with a couple of bay leaves. Yeah I know everything I'm talking about makes the recipe more labor intensive and expensive so make it as presented if you want I'm sure it's great!

More surface area from cutting the roast is more browning is more flavor. The baking soda will raise the pH and results in more browning and more flavor. The small batches will allow the pot and oil to stay hot for more browning and more flavor

Next, I want more mire poix so I'm adding in the biggest yellow onion I can find, two carrots, and like four celery stalks. The base ratio is two parts onion to one part carrot to one part celery but taste is subjective so you do you. I'm also adding a couple cloves of garlic 30 sec before the paste

Also, given what we know from Ha'aretz's reporting about the use of the Hannibal Directive on 10/7, he's essentially saying 9/11 was an inside job lol ALSO, 10/7 wasn't the beginning of history: the IDF has been doing 9/11 every three years since Operation Cast Lead

I won't be finishing another book tomorrow so here's an early #storygraph wrap-up. My favorite this month was Pedagogy of the Oppressed and the short stories in Gaza Writes Back were another big highlight #booksky

America has always had oligarchs. McNamara, Getty, Hunt, the Mellons, the Kennedys, the DuPonts, Ford. Rockefeller, Carnegie & Vanderbilt. Astor, Renssalaer & Girard. Hancock, Franklin & Washington. Grossman's historical erasure condemns us to repeat all the same mistakes...

Nicholas Grossman@nicholasgrossman.bsky.social

Oligarchs. The word for very rich businesspeople directly connected to the top of the government and playing a role in high-level government functions is “oligarchs.” Way beyond lobbying, donating, and advisory councils. Trump brought them on his trip to China too. America has oligarchs now.

August's #storygraph wrap-up. Crowley's Little, Big might be the single best book I've ever read in my entire life. RIP to an absolute master. On the other side of things, Reamde is the worst Stephenson book I've ever read and as it stands it's in the running for worst book this year #booksky

A fascinating facet of conservative culture war nonsense is that all the old "traditional" stuff they love was incredibly divisive in its own contemporary time. Those Rodin sculptures they use in their pfps were from a series on Dante's Inferno and were hated by conservatives of the era!

Movies Silently@moviessilently.bsky.social

And the young folks brought in their own issues like stan culture, pile-ons and flame wars. It was scary out there for a while! Especially since a lot of the younger fans skewed heavily conservative, so they brought a lot of that baggage with them.

My preferences for fiction include beloved characters dying, catastrophic failures, and high concept sci-fi. Automatic Noodle has none of that and I loved it anyways so that's why you should read it

For $1.99 this one is a no-brainer. Sublime prose in a welcome reprieve from the more whimsical "dark" fantasy that's currently filling every bookshelf

ALSO reminder! THE BUTCHER OF THE FOREST (which was up for a Hugo, Ignyte, Nebula, Locus, blah blah etc award) is still just $1.99 in eBook from whomsoever your favourite purveyor might be! :) (Check the buy buttons!) us.macmillan.com/books/978125...

Philosophers often bring up the "principle of charity": a willingness to assume good faith in an interlocutor and treat them accordingly. It's good to do in many circumstances. But it is worth formulating a principle of not being a fucking mark. If not during the rise of fascism, then when? 12/

The QTs and replies in this thread about the overwhelming advantages of incumbency are, incredibly, Democrat dead enders insisting it proves that the slate of current electeds is "good actually". That the 63% disapproval rating just emerges from the ether

Andy Craig@andycraig.bsky.social

Excluding one case of double-bunked incumbents, 159 House Dems have been through their primaries to date and 5 lost (there are 11 states still to vote). That's a renomination rate of 96.9%. The post-WWII average for House is 98.3%. This is what gets much ballyhooed as a "bloodbath" in our system.

7. The film centers Odysseus's guilt over his war crimes, but never shows us the POV of his victims, and instead glorifies the perpetrator for feeling bad about himself. I found this unsatisfying ethically and worse, imaginatively, because Damon's character is given only one mood (Troubled).

July's #storygraph wrap-up. Mistaken Identity and Health Communism were difficult, theory dense reads but very rewarding. Discounting the Future was slow going but comprehensible. #booksky

Implicit in this analysis is that "the stupid poors" will spend this windfall on conscientious consumption instead of paying off loans with interest rates ranging from 12%-28%, or say replacing an older vehicle that would otherwise incur significant annual repair costs

Let's say your household makes 50k annually - you're at the 30th percentile. An additional 50k would jump to you to the 57th percentile, for ONE SINGLE YEAR. This is nice! It would help! But it would not, in most cases, transform your life. You're going from working-class to middle-class, briefly.
