Finally got a good bake on this one after numerous variations. It starts as a biga using about 40% of the total flour (KA bread flour). The final dough is a mix of bread flour, spelt, and Bob’s Red Mill gluten flour to counter the spelt tendency to flow It’s great as toast or with PB&J #breadsky
