In terms of actual goose encounters, like most wild animals they do not actually want to be in a fight so a lot of what they do is posturing. So as long as you don't back down, don't break eye contact, and don't flee the goose is going to realize that "it is much smaller than you" and back down.

I think "mortal combat" is the clear indicator. While I'm absolutely not going to choose to fight a goose, and would not come out uninjured, I think if one of the two of us need to die it's going to be the goose.

The only thing saving a goose is the sort of vague sense of guilt a civilized human feels from killing an animal. As Conan the barbarian shows, this can be overcome

geese aren't able to handle the arcade machine controls, and they don't know any of the combos. it's trivial to defeat them

Regular goose yes, canada goose doubtful on average person as someone who has been attacked by a fair few. The ones around wascana in my hometown are exceptionally aggressive, I have watched them attack: seagulls, 1 albatross, eagles, people, cars, large dogs, cats, construction equipment, a statue.

That said if you get the drop on one maybe? There is the infamous goose wrangler which my dad once watched jump out of a truck, sprint over, break ones neck like a videogame stealth finisher, and leave with it presumably to cook it. Regina is a strange place.

I had a friend in college who believed, with a strength of conviction as admirable as it was foolish, that he could take an ostrich barehanded in a one-on-one fight. I was very glad we lived on the other side of the world from them because lol no he couldn't.

I used to work at a wildlife center & one of my responsibilities was shoeing geese off there nests so we could get an egg count. Trust me, geese put up a big show, but they can't seriously hurt you. Swans however... swans will fuck you up.
