There are distinct regional food cultures in china (sichuan, Cantonese, hunan, etc) and you can find authentic Chinese if you live in a place with a lot of Chinese immigrants. My favorite Chinese place outside Boston had a “secret” sichuan menu that was only available in Chinese 20 years ago.
