Depends on the variety! There's are some nectarines that stay crunchy even when fully ripe and sweet. I think "Snow Queen" is the one I'm remembering, but I'm sure there are others.

An orchard nearby grows nectarines that have a slight initial crunch, but are very juicy and sweet.
